Bored with your chicken recipes? This dish will certainly wake you up. It is creamy and can be as spicy as you wish.
4 -6 chicken breasts, washed, patted dry, cooked and cut into chunks
1 can cream of mushroom soup
1 can chicken broth/stock
1 can Ro-Tel tomatoes (with or without green chilies)
1 lb. Velveeta cheese, cubed
12 oz. spaghetti, cooked and drained
1/4 t. red pepper flakes, optional
salt and pepper, to taste
Preheat oven to 350 degrees. Grease a 9x13 inch baking dish.
Cook spaghetti in salted water according to package directions. Drain.
In a bowl, mix soup, broth/stock, red pepper flakes, if using and Ro-tel tomatoes together.
Layer in baking dish in this order:
cooked spaghetti, chicken, soup mix, Velveeta cheese.
Bake about 30-45 minutes or until heated through and cheese melts.
Stir immediately to mix well, adding salt and pepper to taste.
6-8 servings.
