Oven Baked Chicken Fajitas

Description

Make a healthier version of chicken fajitas with this recipe. They aren't fried, but baked instead. You can put it al together and put in the oven which makes it easier and more convenient for you. Plus, the vegetables stay crisp, which makes it yummy!

Ingredients

1 lb. boneless, skinless chicken breasts, washed, patted dry with paper towels and cut into strips (or buy strips pre-packaged)
2 T. vegetable oil
2 t. chili powder
1-2 t. cumin
½ t. garlic powder
½ t. dried oregano
½ t. salt
15 oz. can diced tomatoes with green chilies
1 medium sweet onion, sliced
1-2 large bell peppers, seeded and sliced, any color
12 flour tortillas
toppings like cheese, sour cream, avocado slices and guacamole

Preheat oven to 400 degrees. Grease a 13x9 inch baking dish.

Place chicken strips in baking dish.

In a small bowl, combine oil, chili powder, cumin, garlic powder, dried oregano, and salt.

Drizzle the spice mixture over the chicken; stir to coat. Add tomatoes, peppers, and onions to the dish; stir to combine.

Bake uncovered 20-25 minutes or until chicken is cooked through and the vegetables are tender.

Serve on tortillas with desired toppings.
