Make your own Taco Bell style Mexican pizza at home and know exactly what you are eating. They are made on flour tortilla and have all the wonderful Mexican goodies like enchilada sauce, tomatoes with green chilies, ground beef, taco seasoning, refried be
olive oil
8 1/2 oz. package 8-inch flour tortillas
10 oz. can enchilada sauce
10 oz. can diced tomatoes with mild green chilies, drained
1 lb. lean ground beef or ground turkey
8 oz. package taco seasoning
15 oz. can refried beans
8 oz. bag Mexican blend cheese
2 stalks green onions, chopped
Prepare taco meat according to package directions.
Warm refried beans.
Preheat broiler.
Pour a small amount of olive oil in a pan and heat to 375 degrees but do not put so much that it will cover the flour tortilla).
Cook tortilla's in the pan at 375 degrees for 30-45 seconds or until just golden brown. Drain on paper towels.
Top tortillas with a thin layer of refried beans; top beans with a layer of taco meat; place a tortilla on top of the taco meat. Put some red sauce on top of the tortilla. Put a few diced tomatoes and green chiles on top of the red sauce. Top with the Mexican blend cheese. Finally top with a few chopped green onions.
Put pizzas on a cookie sheet; broil in oven until cheese is melted.
Cut into fourths; serve.
4 servings.
You can add sliced black olives before broiling and avocado slices just before serving, if you would like!
