Frozen bell pepper and onion stir-fry, corn, refried beans, Cheddar cheese, ground beef with taco sauce and taco seasoning all topped with crunch chili-cheese corn chips make this an irresistible meal by kids and grown-ups alike.
1 lb. lean ground beef
2 c. frozen bell pepper and onion stir-fry
11 oz. can whole kernel sweet corn
1 oz. pkg. taco seasoning mix
16 oz. can refried beans
1/2 c. taco sauce
2 c. chili-cheese corn chips
4 oz. shredded Cheddar cheese
Preheat oven to 375 degrees. Spray an 8 inch square (2 quart) glass baking dish with non=stick cooking spray.
Brown ground beef in large skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain and discard grease.
Add bell pepper and onion stir-fry, corn, taco seasoning mix and 1/4 c. water; mix well. Cook over medium-high heat 5 - 6 minutes or until liquid is absorbed, stirring occasionally.
Meanwhile, in small bowl, combine refried beans and taco sauce; mix well.
Spoon 1/2 of the beef mixture into the prepared baking dish. Top with 1/2 of the bean mixture and 1/2 of the corn chips. Top with remaining beef mixture and bean mixture. Cover with foil. Bake 30 minutes.
Remove from oven; uncover; top with remaining 1/2 of the chips. Sprinkle with cheese.
Return to oven; bake, uncovered, an additional 10 - 12 minutes or until thoroughly heated and cheese is melted.
When serving, garnish with chopped fresh cilantro, if desired.
