Make Mexican inspired chicken wings/drummettes easily with just a few ingredients and a little time. They make a delicious appetizer or main dish.
1 c. Ranch salad dressing
4.5 oz. can copped green chiles
1/2 c. all-purpose flour
1 oz. pkg. taco seasoning mix
2 t. oil
24 chicken drummettes or chicken wings (about 2 lb.)
dried parsley flakes
Preheat oven to 350 degrees. Spray a large cookie sheet with non-stick cooking spray or line it with foil.
In blender, combine salad dressing and chiles; cover; blend until smooth. Spoon into a small serving bowl. Refrigerate while making drummettes/wings.
In a shallow dish, combine flour and taco seasoning; mix well. Stir in oil with a fork or a whisk until well blended. Coat drummettes with flour mixture. Coat drummettes/wings again, using up all flour mixture. Place on the prepared cookie sheet.
Bake 15 minutes. Turn drummettes; bake another 14 - 17 minutes or until chicken is fork-tender and juices run clear. Remove from oven. (for crispier wings, bake longer)
Sprinkle parsley flakes on salad dressing mixture; serve as dip with warm drummettes/wings.
