Ingredients

2 small tomatoes
1 small onion
1 medium jalapeno pepper, chopped
1 clove garlic; chopped
1 clove garlic, minced
1/2 t. hot sauce
1 t. ground cumin
Kosher salt, to taste
freshly ground pepper, to taste

2 T. + 2 t. extra-virgin olive oil, divided

15. 5 oz. refried beans, pinto or black beans, drained, rinsed
1/2 c. warm water
pinch of salt

4 large eggs
freshly ground black pepper, to taste
4 six inch corn tortillas, warmed
1/2 c. crumbled feta cheese, Mexican cheese blend, or taco cheese
1/4 c. chopped fresh cilantro

Salsa:
Set a grater in/over a large bowl; grate tomatoes and onion into the bowl; add jalapeno, chopped garlic, hot sauce, cumin, salt and pepper, to taste. Heat a medium skillet over low heat; add 2 t. olive oil. Cook salsa in oil until it thickens slightly, about 3 minutes. Put in a bowl and set aside.

Add beans to the same skillet with the minced garlic, 1/2 c. warm water and a pinch of salt; cook over low heat until warmed through, mashing slightly with a fork.

Heat the remaining 2 T. oil in another skillet; fry eggs sunny-side up; season with pepper.

Place 1 warm tortilla on each plate; divide beans evenly among them; top with a fried egg, salsa and cheese.

Sprinkle with cilantro; serve with the remaining salsa.
