Ingredients
- 2 small tomatoes
- 1 small onion
- 1 medium jalapeno pepper, chopped
- 1 clove garlic; chopped
- 1 clove garlic, minced
- 1/2 t. hot sauce
- 1 t. ground cumin
- Kosher salt, to taste
- freshly ground pepper, to taste
- 2 T. + 2 t. extra-virgin olive oil, divided
- 15. 5 oz. refried beans, pinto or black beans, drained, rinsed
- 1/2 c. warm water
- pinch of salt
- 4 large eggs
- freshly ground black pepper, to taste
- 4 six inch corn tortillas, warmed
- 1/2 c. crumbled feta cheese, Mexican cheese blend, or taco cheese
- 1/4 c. chopped fresh cilantro
Steps
- Salsa:
- Set a grater in/over a large bowl; grate tomatoes and onion into the bowl; add jalapeno, chopped garlic, hot sauce, cumin, salt and pepper, to taste. Heat a medium skillet over low heat; add 2 t. olive oil. Cook salsa in oil until it thickens slightly, about 3 minutes. Put in a bowl and set aside.
- Add beans to the same skillet with the minced garlic, 1/2 c. warm water and a pinch of salt; cook over low heat until warmed through, mashing slightly with a fork.
