There are many ingredients listed here, but you may already have many of them in your pantry. You will most likely need them again because you will want to make it again, it is so good. It really is easy to make and tastes wonderful. Just be sure to make
Tequila-Lime Chicken Marinade:
2 T. Gold Tequila
1⁄4 c. freshly squeezed lime juice
2 T. freshly squeezed orange juice
1 t. fajita seasoning mix
3⁄4 t. fresh jalapeno pepper, seeded and minced
3⁄4 t. fresh garlic, minced
1⁄4 t. kosher salt
1⁄4 t. freshly ground black pepper
1 boneless chicken breasts, skin on or 1 boneless skinless chicken breast
Pico de Gallo:
1 small tomato, diced
1⁄2 small onion, diced
1 -2 t. diced jalapeno
1⁄8 c. fresh cilantro, diced
1⁄2 t. salt
1⁄8 t. freshly ground black pepper
1⁄8 t. garlic powder
1 t. olive oil
1 t. white vinegar
Dressing:
3 T. bottled Ranch dressing
Garnish:
tortilla chips or corn tortilla strips
chopped scallions, sprinkled on top
1 oz. sour cream
1 oz. guacamole
2 oz. Pico de Gallo, made as directed
Salad:
3 - 4 c. torn salad greens
1⁄8 - 1⁄4 c. shredded Monterey Jack cheese or shredded Cheddar cheese
Preparation the day before:
Wash chicken, pat dry and set aside. Combine marinade ingredients in a large container with a lid. Add chicken; place in refrigerator overnight.
Wash tomato; chop veggies as needed. Combine Pico de Gallo ingredients in a small container with lid; place in refrigerator overnight.
The day of:
Remove chicken from marinade; sprinkle with fajita seasoning. On outdoor grill, cook skin-side down for about 5 minutes, turn and continue to grill about 10 minutes or until chicken is cooked through. An indoor grill can be used with wonderful results, cook about 7 minutes.
While the chicken is grilling, combine Ranch dressing with 2 T. Pico de Gallo; set aside.
Prepare garnishes:
Toss salad greens with cheese and remaining Pico de Gallo. Sprinkle with fried tortilla strips or lightly crushed tortilla chips.
Cut chicken into strips; place on top of greens. Add garnishes of choice to plate. Serve.
