1 T. olive oil
2 boneless, skinless chicken breasts, cut into bite-size pieces
salt, to taste
pepper, to taste
1/2 c. BBQ sauce
1/2 c. shredded mozzarella cheese
2/3 c. chopped pineapple, fresh or canned
1/4 of a red onion, chopped
1 romaine heart, chopped
1/4 c. fresh cilantro, chopped
4-5 large tortillas, your favorite
avocado slices, if desired
Wash chicken and pat dry with paper towels. Cut into bite-sized pieces.
Wash romaine; drain; chop. Wash cilantro; drain; chop. Peel and slice avocado, if using. Peel red onion; chop.
Heat oil in a large skillet over medium high heat; add in chicken pieces; season with salt and pepper. Cook, flipping once, until chicken is cooked through and golden brown. Remove pan from heat; add BBQ sauce; toss chicken to coat.
Place tortilla on a plate/platter. Layer with a spoonful of BBQ chicken, cheese, pineapple, onion, chopped romaine, avocado and cilantro. Roll, burrito style; secure with a toothpick.
Serve immediately.
