Ingredients

• 1 T. olive oil
• 2 boneless, skinless chicken breasts, cut into bite-size pieces
• salt, to taste
• pepper, to taste
• 1/2 c. BBQ sauce
• 1/2 c. shredded mozzarella cheese
• 2/3 c. chopped pineapple, fresh or canned
• 1/4 of a red onion, chopped
• 1 romaine heart, chopped
• 1/4 c. fresh cilantro, chopped
• 4-5 large tortillas, your favorite
• avocado slices, if desired

Steps

1. Wash chicken and pat dry with paper towels. Cut into bite-sized pieces.
2. Wash romaine; drain; chop. Wash cilantro; drain; chop. Peel and slice avocado, if using. Peel red onion; chop.
3. Heat oil in a large skillet over medium high heat; add in chicken pieces; season with salt and pepper. Cook, flipping once, until chicken is cooked through and golden brown. Remove pan from heat; add BBQ sauce; toss chicken to coat.
