Chicken Enchilada Casserole

Ingredients

2 c. cooked chicken, diced (rotisserie works great)
3 c. shredded Monterey Jack cheese blend, Cheddar, or Mexican blend, shredded and divided
4.5 oz. can chopped green chilies, undrained
8-12 flour or corn tortillas, depending on size
16 oz. can refried beans, divided
19 oz. enchilada sauce
1/4 c. medium sliced green onions, optional, for garnish

fresh cilantro, if desired

Preheat oven to 350 degrees.

Mix together chicken, 1 1/2 c. cheese, and chiles in a bowl. Evenly spread a few spoonfuls enchilada sauce on the bottom of a 9 x 13 inch casserole dish; layer 2 tortillas on top of the sauce, making sure that the entire bottom of the dish and part of the sides are completely covered by the tortillas.

Spread half of the refried beans on top of the tortillas, followed by half of the chicken mixture, and then half of the enchilada sauce. Place 2 tortillas on top of this layer, followed by the remaining refried beans and chicken mixture. Add the rest of the enchilada sauce on top of these tortillas; sprinkle the remaining cheese on top.

Cover the dish with foil; bake 45 - 55 minutes, or until bubbly.

Garnish with chips and cilantro if desired. Serve.
