Description
This bold flavored dish makes a great weeknight dinner that your family will love. With just 7 ingredients and one casserole dish, it's easy to make and customize to your own taste.
Ingredients
- 2 c. cooked chicken, diced (rotisserie works great)
- 3 c. shredded Monterey Jack cheese blend, Cheddar, or Mexican blend, shredded and divided
- 4.5 oz. can chopped green chilies, undrained
- 8-12 flour or corn tortillas, depending on size
- 16 oz. can refried beans, divided
- 19 oz. enchilada sauce
- 1/4 c. medium sliced green onions, optional, for garnish
- fresh cilantro, if desired
Steps
- Preheat oven to 350 degrees.
- Mix together chicken, 1 1/2 c. cheese, and chiles in a bowl. Evenly spread a few spoonfuls enchilada sauce on the bottom of a 9 x 13 inch casserole dish; layer 2 tortillas on top of the sauce, making sure that the entire bottom of the dish and part of the sides are completely covered by the tortillas.
- Spread half of the refried beans on top of the tortillas, followed by half of the chicken mixture, and then half of the enchilada sauce. Place 2 tortillas on top of this layer, followed by the remaining refried beans and chicken mixture. Add the rest of the enchilada sauce on top of these tortillas; sprinkle the remaining cheese on top.
