Enjoy this casserole for breakfast, brunch or dinner. It's an interesting twist on the regular hash brown casserole that will make your family happy.
1 lb. lean ground beef
½ c. onion, finely chopped or grated
2-3 garlic cloves, minced
1 T. chili powder
1 t. cumin
¾ c. tomato sauce
1 lb. shredded hash brown potatoes
½ c. sour cream
½ c. milk
1 ½ T. Ranch dressing mix (about half of a packet)
Velveeta cheese, thinly sliced, your favorite cheese slices or shredded cheese
5 cherry tomatoes, washed and cut in half
Preheat oven to 350 degrees. Grease a small casserole dish.
In a skillet, brown beef and onion. When beef in browned, discard any grease. Add garlic, chili powder, cumin, and tomato sauce. Mix well; simmer 5 minutes.
In a separate bowl, whisk together milk, sour cream, and Ranch dressing mix.
Place hash browns in the casserole dish; pour milk mixture evenly over the hash browns. Cover the hash brown mixture with the ground beef mixture. Top with thin slices of cheese and cherry tomatoes.
Bake uncovered for 20-25 minutes.
