Description
Enjoy this casserole for breakfast, brunch or dinner. It's an interesting twist on the regular hash brown casserole that will make your family happy.
Ingredients
- 1 lb. lean ground beef
- ½ c. onion, finely chopped or grated
- 2-3 garlic cloves, minced
- 1 T. chili powder
- 1 t. cumin
- ¾ c. tomato sauce
- 1 lb. shredded hash brown potatoes
- ½ c. sour cream
- ½ c. milk
- 1 ½ T. Ranch dressing mix (about half of a packet)
- Velveeta cheese, thinly sliced, your favorite cheese slices or shredded cheese
- 5 cherry tomatoes, washed and cut in half
Steps
- Preheat oven to 350 degrees. Grease a small casserole dish.
- In a skillet, brown beef and onion. When beef in browned, discard any grease. Add garlic, chili powder, cumin, and tomato sauce. Mix well; simmer 5 minutes.
- In a separate bowl, whisk together milk, sour cream, and Ranch dressing mix.
