Making this salad couldn't be easier. The only cooking required is the ground beef. The other ingredients are just chopped. Change up the recipe according to your tastes. You can add black beans, guacamole or sour cream and any dressing that you prefer.
6 oz. butter lettuce
2/3 c. canned sweet corn, rinsed well (or fresh off of the cob or frozen, thawed)
1 large, ripe avocado, peeled and sliced
1 lb. warm taco meat (ground beef), prepared with a taco seasoning packet according to pkg. directions
8 campari tomatoes, quartered or your favorite
1 c. grated or shredded Cheddar or 4 cheese Mexican cheese
2/3 c. sliced black olives, drained
1 small red onion, chopped
2 T. chopped cilantro, optional
salt and pepper, to taste
Nacho Doritos
Dressing:
1/2 c. Ranch dressing
1/2 c. salsa, thick and chunky
Rinse lettuce; drain; pat dry with a towel. Wash/rinse tomatoes; cut into quarters. Rinse avocado; peel and slice.
Prepare taco meat with taco seasoning according to package directions.
Place lettuce on a serving platter. Line up all ingredients for the salad over the top of the lettuce in any order. Top with chopped cilantro, if using. Sprinkle with salt and pepper, to taste.
Stir together Ranch dressing and salsa.
Place Doritos around the edges of the platter. Serve with dressing, if desired.
