Description
Make a delicious, quick and easy meal with canned black bean soup, onion, red pepper, jalapeno pepper, garlic, chicken and rice. No need to season, the seasonings are all in the soup.
Ingredients
- 1 T. canola oil
- 1 large onion, cut in half and sliced
- 1 small red pepper, cut into 2 inch long strips
- 1 medium jalapeno pepper, seeded and minced
- 2 garlic cloves, minced
- salt, to taste
- freshly ground black pepper, to taste
- 10 3/4 oz. can Campbell's condensed Black Bean, Cumin & Cilantro soup, undiluted
- 2 c. cooked chicken, diced
- 1 c. cooked rice
- 4- 10 inch flour tortillas, warmed
- 1/2 c. chopped fresh cilantro leaves, optional
- 1 lime, cut into 4 wedges
Steps
- Heat oil in a 10 inch skillet over medium heat; add onion, red pepper and jalapeno pepper; cook 5 minutes or until vegetables are tender but crisp, stirring constantly. Add garlic; cook, stirring constantly for 30 seconds; season with salt and pepper.
- Stir in soup, chicken and rice; cook until hot; remove from heat.
- Evenly divide mixture down the middle of each tortilla; sprinkle each with 2 T. cilantro leaves, if using and the juice from a lime wedge. Fold up the sides around the filling and then fold up the ends to close.
