Make a delicious, quick and easy meal with canned black bean soup, onion, red pepper, jalapeno pepper, garlic, chicken and rice. No need to season, the seasonings are all in the soup.
1 T. canola oil
1 large onion, cut in half and sliced
1 small red pepper, cut into 2 inch long strips
1 medium jalapeno pepper, seeded and minced
2 garlic cloves, minced
salt, to taste
freshly ground black pepper, to taste
10 3/4 oz. can Campbell's condensed Black Bean, Cumin & Cilantro soup, undiluted
2 c. cooked chicken, diced
1 c. cooked rice
4- 10 inch flour tortillas, warmed
1/2 c. chopped fresh cilantro leaves, optional
1 lime, cut into 4 wedges
Heat oil in a 10 inch skillet over medium heat; add onion, red pepper and jalapeno pepper; cook 5 minutes or until vegetables are tender but crisp, stirring constantly. Add garlic; cook, stirring constantly for 30 seconds; season with salt and pepper.
Stir in soup, chicken and rice; cook until hot; remove from heat.
Evenly divide mixture down the middle of each tortilla; sprinkle each with 2 T. cilantro leaves, if using and the juice from a lime wedge. Fold up the sides around the filling and then fold up the ends to close.
Makes 4 burritos.
