Baked Creamy Chicken Taquitos

Description

These chicken taquitos make a great appetizer or a scrumptious dinner. If serving for dinner, serve them with black beans, refried beans, Mexican rice, or cilantro rice for a complete meal.

Ingredients

1/3 c. cream cheese, softened
1/4 c. green salsa
1 T. freshly squeezed lime juice
1/2 t. cumin
1 t. chili powder
1/2 t. onion powder
1/4 t. garlic powder
3 T. freshly chopped cilantro
2 T. sliced green onions
2 c. shredded or diced cooked chicken
1 c. shredded Mexican or Pepperjack cheese
12-16 small 6 inch flour or corn tortillas
Kosher salt
freshly ground black pepper

1 c. salsa, sour cream and/or guacamole
non-stick cooking spray

Preheat oven to 425 degrees. Line a baking sheet with aluminum foil; lightly coat with non-stick cooking spray.

Heat cream cheese in microwave for about 30 seconds to make it soft and easy to stir. Add green salsa, lime juice, cumin, salt and pepper, to taste, chili powder, onion powder and garlic powder; mix well. Add cilantro, green onions, chicken and cheese; combine well.

Place 3T. chicken mixture on lower third of a tortilla; roll tortilla up as tightly as possible. Place tortillas seam side down on baking sheet. Spray tops lightly with cooking spray; sprinkle salt on tops.

Bake 15-20 minutes until tortillas start to turn golden brown.

Makes 12- 16 taquitos.

Serve with salsa, sour cream, and/or guacamole for dipping. Turn into a delicious meal by serving with black beans and rice.
