This tasty slow cooker dish requires only 3 ingredients and a little time to dump it in a slow cooker. Serve it in tacos with cheese and the usual condiments, in burritos or quesadillas or over rice and a side of black beans or refried beans and some Mexi
28 oz. package boneless, skinless chicken thighs (or breasts)
1 oz. packet taco seasoning mix, divided
24 oz. jar salsa, Rotel tomatoes and green chilies or Rotel with lime and green chilies
Wash chicken and pat dry. Line the crock of the slow cooker with a slow cooker liner for easy clean up, if desired.
In a 4 - 5 quart slow cooker, toss chicken with half of the taco seasoning mix; coat evenly. Pour salsa on top of the chicken; carefully stir until well combined. Cover; cook on Low 4 - 4 1/2 hours or until chicken is tender.
Remove chicken from slow cooker to a large bowl or platter; shred chicken with 2 forks.
Return shredded chicken to slow cooker with the remaining half of the taco seasoning mix. Cover; cook on Low 30 minutes longer.
Serve warm.
