Don't let the cold weather get you down. Serve this soup to warm you up. It's not only the best but it's the easiest taco soup ever. Customize it to your own taste and everyone will love you.
1 lb. ground beef , turkey or chicken
1 medium sweet onion, chopped finely or grated
1 green bell pepper, chopped
1 red bell pepper, chopped
1 - 2 T. taco seasoning (or to taste)
15 oz. can black beans, drained and rinsed
15 oz. can kidney beans, drained and rinsed
15 oz. can pinto or white beans, drained and rinsed, optional
15 oz. can corn, with juices
15 oz. can tomato sauce
10 oz. can Rotel tomatoes with juices
15 oz. can diced tomatoes with juices
1/4 c. salsa
Optional: sour cream, chopped green onion, Mexican blend cheese and tortilla chips, for serving
Brown hamburger in a large pot over medium heat. Add in onions and bell peppers; saute for a few minutes. Add in remaining ingredients; stir until combined. Simmer about 20 minutes, stirring occasionally. Add a little water or chicken stock if it starts to get too thick, let it simmer a little longer.
Top with sour cream, green onion and cheese. Serve with tortilla chips.
6-8 servings.
*This soup could also be made in a crock pot. Let it cook on low for several hours.
**This soup makes a great freezer meal. Allow it to cool. Place in a freezer ziplock bag or container. It keeps for up to 6 months in the freezer.
