Don't let the cold weather get you down. Serve this soup to warm you up. It's not only the best but it's the easiest taco soup ever. Customize it to your own taste and everyone will love you.
Ingredients
- 1 lb. ground beef , turkey or chicken
- 1 medium sweet onion, chopped finely or grated
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 - 2 T. taco seasoning (or to taste)
- 15 oz. can black beans, drained and rinsed
- 15 oz. can kidney beans, drained and rinsed
- 15 oz. can pinto or white beans, drained and rinsed, optional
- 15 oz. can corn, with juices
- 15 oz. can tomato sauce
- 10 oz. can Rotel tomatoes with juices
- 15 oz. can diced tomatoes with juices
- 1/4 c. salsa
- Optional: sour cream, chopped green onion, Mexican blend cheese and tortilla chips, for serving
Steps
- Brown hamburger in a large pot over medium heat. Add in onions and bell peppers; saute for a few minutes. Add in remaining ingredients; stir until combined. Simmer about 20 minutes, stirring occasionally. Add a little water or chicken stock if it starts to get too thick, let it simmer a little longer.
- Top with sour cream, green onion and cheese. Serve with tortilla chips.
- 6-8 servings.
