Fajitas:
oil, to saute
1 large green pepper, sliced
2 red peppers, sliced
1 large yellow onion, sliced
1 lb. organic chicken breasts, sliced
1 T. extra virgin olive oil
1T. paprika
1/2 T. garlic powder
1/2- 2 t. cayenne pepper
fajita seasoning, to taste (optional)
1 t. sea salt, or to taste
freshly squeezed juice of 1/2 lime, (save the other half to garnish)
Salad:
4 c. lettuce of choice
1 avocado, peeled and sliced
1 c. fresh salsa, or your favorite salsa for dressing
Heat oil in a skillet. Add in sliced peppers and onions; cook 5-7 minutes, stirring often until soft.
Add in sliced chicken; cook 5 minutes, stirring occasionally. Add in paprika, cayenne, salt, garlic powder and lime juice; mix well to combine.
Lower heat to medium; cook 8-10 minutes until chicken is fully cooked, flavors have combined, and peppers and onions are soft.
Serve over salad. Garnish with lemon slices.
