Foil Pack Creamy Salsa Verde Chicken, Rice and Veggies

Description

These foil chicken packs are delicious, easy to prepare and full of tasty Mexican flavors. It can be made in the oven or on the grill, which would make a fantastic meal to cook while camping.

Ingredients

1 c. instant Minute white rice
1 1/2 c. water
2 large, 7 oz. each, boneless, skinless chicken breasts
1/2 t. each: cumin, garlic powder, salt and pepper
1 t. chili powder
1/8 t. paprika
1 oz. full-fat cream cheese
6 T. salsa verde
1/2 c. roasted corn (freshly grilled or canned roasted corn)
1/2 c. black beans
1/2 c. Pepper Jack cheese
roasted green chiles, lime, cilantro, sour cream, red bell pepper, optional

Preheat oven to 400 degrees. Generously grease 2 large sheet of heavy duty aluminum foil with cooking spray.

Weigh chicken to get two 7 oz. pieces; pound or slice the pieces to 1/2 inch thickness.

Toss together the instant rice and water; let stand for 5 minutes.

In a bowl, toss together seasonings: cumin, garlic powder, salt, pepper, chili powder and paprika.

Dredge chicken breasts evenly in the seasonings, on both sides.

Divide the rice mixture including the water evenly among the 2 foil packets; place chicken on top.

Cut the cream cheese into 4 equal pieces; place 2 pieces on top of each chicken breast. Spoon 3 T. salsa verde on top of each chicken breast. Put 1/4 c. corn and 1/4 c. black beans next to each chicken breast. If desired, add a few pieces of thinly sliced red bell pepper to each foil packet.

Seal the packet closed, allowing for expansion, making sure it's completely sealed.

Bake for 30-50 minutes or until chicken is completely cooked through and registers 165 degrees.

Stir everything around in foil packs; top each with Pepper Jack cheese. Add additional toppings, if desired.

2 servings.

*The size of the chicken and the heat of the oven makes it difficult give an exact time it should be done. Be flexible on timing- it could be anywhere from 30-50 minutes.

If Grilling:
Preheat the grill to medium-high heat; allow to heat for 10-15 minutes.

Place well sealed foil packets on grill for 25-35 minutes or until chicken registers 165 degrees F, flipping once in between at about 10-15 minutes.
