You will be pleased to find that these taste just like the ones at Cheesecake Factory. The sweet cake and spices are fantastic and the sauces are surprisingly mild. Be sure to eat them while they are still piping hot.
Salsa Verde:
2 tomatillos, diced
4 oz. mild green chilies, drained and diced
1 green onion, minced
2 T. fresh cilantro, minced
1 1⁄4 t. granulated sugar
1⁄4 t. ground cumin
1⁄4 t. salt
pinch ground black pepper
Tomato Salsa:
1 medium tomatoes, diced
1 T. minced Spanish onion
1 T. fresh cilantro, minced
1⁄4 t. freshly squeezed lime juice
1⁄2 small jalapeno, seeded and minced
dash salt
dash ground black pepper
Southwestern Sauce:
1⁄2 c. mayonnaise
1 t. white vinegar
1 t. water
3⁄4 t. granulated sugar
1⁄2 t. chili powder
1⁄4 t. paprika
pinch cayenne pepper
pinch onion powder
dash salt
dash garlic powder
Cakes:
1 1⁄2 c. frozen sweet corn
1⁄2 c. butter, softened
3 T. sugar
pinch salt
1⁄2 c. corn flour (masa harina flour)
2 T. all-purpose flour
Garnish:
1⁄4 c. sour cream
1⁄2 avocado, diced
2 T. fresh cilantro, chopped
Salsa verde: combine all prepared ingredients; chill.
Tomato salsa: combine all prepared ingredients; chill.
Southwestern sauce: combine all ingredients; chill.
Preheat oven to 400 degrees.*
Prepare the tamale cakes by chopping 1 c. frozen corn in a food processor until coarsely pureed. Combine pureed corn with softened butter, sugar and salt; blend well. Add corn flour (masa) and flour; blend well. Mix in the remaining 1/2 c. frozen corn kernels by hand.
Measure 1/2 c. portions of the mixture; use hands to form into 3 inch wide patties.
Arrange patties on a baking sheet; bake for 25 - 30 minutes or until the cakes are browned on the bottom. Use a spatula to carefully flip all cakes; bake for another 5 - 7 minutes or until other side is browned.*
To assemble: place all 3 cakes on a warmed serving platter. Dollop each with 1 of the 3 sauces.
Garnish with diced avocado, cilantro and a dollop of sour cream.
Serve immediately while piping hot.
4 servings.
*You could also cook it is in a skillet and NOT in the oven. Just cook on low-medium heat like pancakes until very golden brown.
