Make a seriously easy and delicious chicken with just 5 ingredients. In about 30 minutes you will have a main dish that your family will ask you to make over and over again. Serve it with Mexican rice and refried beans, if desired.
2-3 lb. boneless, skinless chicken breasts (fillet them so they cook faster, if desired)
1 can green chili enchilada sauce
½ t. chili powder
½ t. garlic salt
½ - 1 c. shredded Monterrey Jack cheese
Preheat oven to 375 degrees. Spray a 9 x 13 pan with non-stick cooking spray.
Place chicken in the prepared pan. Season with garlic salt and chili powder. Pour green chili enchilada sauce over the chicken.
Bake for 25-30 minutes until chicken is cooked through. Top with the shredded cheese; broil for 1 minute or until cheese is melted.
4-6 servings.
