A chicken salad with a mexican flavor.
2 T. oil
1/2 t. salt
3 chicken breasts
1/4 t. pepper
3/4 t. cumin, ground
1 lime, zest
2 limes, juiced
1/4 t. sugar
1/4 t. mexican chili powder
1/4 c. red bell pepper, diced
1/4 c. yellow bell pepper, diced
1/4 c. red onion, diced
2 T. fresh cilantro, chopped roughly
1 cup guacamole
Mix oil, 1/4 t. salt, pepper, cumin, sugar, lime zest and juice of 1 1/2 limes. Add to chicken and allow to marinate for at least 20 minutes but not more than 30 minutes. Grill chicken on each side for 2 minutes. Grill chicken on each side for 2 minutes, then place in 400 degree oven for 8 minutes and allow chicken to rest for 5 minutes before dicing. Mix in bell pepper, onion, cilantro, guacamole, diced chicken, the rest of the lime juice and the remaining salt.
Can be served in a pita wrap, in a bell pepper that has been blanched, on a whole wheat bun, dollar roll, or as a lettuce wrap. It could also be served with your choice of cracker.
