Healthy and low calorie dishes can actually taste good with lots of seasonings and great ingredients. This one is only 183 calories and 0 freestyle WW points per serving and is easily made in the slow cooker.
1 1/2 lb. chicken breast
14.4 oz. can diced tomatoes, with mild green chilies
15 oz. can black beans, drained and rinsed
8 oz. frozen corn
1/4 c. chopped fresh cilantro
14.4 oz. can fat-free chicken broth/stock
3 scallions, chopped
1 t. garlic powder
1 t. onion powder
1 t. cumin
1 t. cayenne pepper, or to taste
salt, to taste
Place a slow cooker liner in the crock of the slow cooker for easy clean up, if desired.
Combine chicken broth/stock, beans, corn, tomatoes, cilantro, scallions, garlic and onion powders, cumin, cayenne pepper and salt in the slow cooker.
Season chicken with salt; lay on top.
Cook on Low for 8 – 10 hours or on High for 4 - 6 hours; 30 minutes before serving, remove chicken from slow cooker; shred. Return chicken to slow cooker; stir; adjust salt and seasoning, to taste.
Serve over rice or tortillas with your favorite toppings.
