Warmer weather is coming soon, so it's time to fire up your grill. Use it to make a grilled flank steak full of Mexican flavors. Use it in tacos, burritos or serve it as the main dish with your favorite Mexican sides.
2 limes, juiced
4 cloves garlic, crushed
½ c. orange juice
1 c. chopped fresh cilantro
½ t. salt
¼ t. black pepper
¼ c. olive oil
1 jalapeno, minced
2 T. white vinegar
2 lb. flank steak
In a gallon size resealable bag, combine fresh lime juice, garlic, orange juice, cilantro, salt, pepper, olive oil, jalapeno and vinegar; squish around to mix it up. (It can also be marinated in a shallow bowl.)
Put the entire flank steak into the resealable bag; seal tightly, making sure all meat is exposed to the marinade, squishing the bag around to coat.
Refrigerate for at least 2 hours or overnight.
When ready to cook, preheat an outdoor grill to High heat.
Remove flank steak from the marinade; discard excess marinade.
Cook on the grill for 7 - 10 minutes per side.
When done, remove from heat. Let rest 10 minutes. Slice against the grain.
Serve.
