Even the kids will want seconds of this delicious meal. It's an easy weeknight dinner that's incredibly simple to make. Everyone can choose their own toppings.
1 lb. lean ground beef
1 small onion, chopped
2 cloves garlic, minced
1/2 t. dried oregano
1/2 t. ground cumin
14 oz. can chili beans, drained
1 c. chunky salsa
1/3 c. grated Parmesan cheese
Eight 8-inch flour tortillas
2 c. shredded cheddar or jack cheese or mixture
3 green onions, chopped
sour cream, salsa, sliced avocado, or chopped tomatoes, for serving
In a large non-stick skillet, cook beef and onion over medium heat until meat is no longer pink; discard any fat. Add garlic, oregano, cumin and beans. Cook for about 5 minutes; stir in salsa and Parmesan cheese.
Preheat oven to 350 degrees. Spray a 13 x 9 inch glass baking dish with non-stick cooking spray.
Spoon 1/2 c. beef/bean mixture onto the center of a tortilla; roll up tightly; place seam-side-down in the prepared pan. Continue with remaining tortillas and filling, snuggling them alongside one another.
Sprinkle shredded cheese on top; scatter the green onions on top of the cheese. Cover with a sheet of greased aluminum foil.
Bake 20 minutes. Remove the foil; bake for another 5 - 10 minutes, until the cheese is hot and bubbly.
Serve burritos with sour cream, salsa, sliced avocado or chopped tomatoes, as desired.
