Turn your chicken breasts into something special with just a few simple ingredients and about 30 minutes of your time. It is a great main dish to serve to your family along with Mexican rice and tortilla strips.
4 boneless, skinless chicken breasts
2 T. taco seasoning
1 c. salsa
1 c. shredded cheese (Cheddar, Mexican blend, or your favorite)
cilantro, for garnish, optional
Preheat oven to 350 degrees.
Place chicken in a baking dish; sprinkle taco seasoning evenly over both sides of breasts; pour salsa over the tops of the chicken.
Bake for 25-30 minutes, until chicken is cooked through. Sprinkle with cheese. Bake 5 more minutes or until cheese is melted.
Serve, garnished with cilantro, if desired.
