Your family will thank you for this Southwest inspired quiche with tons of fabulous flavor. It makes a fantastic weeknight meal for your busy household.
1 refrigerated pie crust, at room temperature
1 lb. lean ground beef
4 green onions, white parts only, thinly sliced
10 oz. can diced tomatoes with green chilies
salt, optional
freshly ground black pepper, to taste
1/4 t. chili powder
4 eggs
1/4 c. water
1/4 c. whipped cream cheese
1/4 t. nutmeg
1/ 1/2 - 2 c. Mexican style taco shredded cheese
Preheat oven to 375 degrees.
Lightly grease a 9 inch pie plate with non-stick cooking spray; line with pie crust; set aside.
Place beef in a skillet; cook until browned; discard fat. Stir in green onions, tomatoes, salt, pepper and chili powder; set aside.
In a large bowl, whisk together eggs, water, cream cheese and nutmeg; whisk until well combined.
Spoon meat mixture into prepared pie crust; pour egg mixture over meat mixture; top with cheese.
Bake 35-40 minutes, or until set.
