Serve your family a flavorful Mexican inspired meal with ground chicken, taco seasoning, diced tomatoes, cheese, long grain rice and topping of your choosing. It's spicy, cheesy and will soothe your cravings.
1 lb. ground chicken breast (or ground beef or ground turkey)
1/4 c. taco seasoning (or mix 2 1/2 T. chili powder, WITHOUT onion or garlic, 1 1/2 T. cumin and 1/4 t. salt; add a dash of cayenne pepper for some heat, if desired)
14 oz. can diced tomatoes, fire-roasted or plain with NO onion or garlic, undrained
1 c. frozen plain corn niblets, optional
3/4 c. long grain rice
2 c. chicken stock/broth (or water)
1 1/2 c. shredded Colby Jack cheese
Toppings:
sour cream or small amount plain Greek yogurt
diced avocado
sliced black olives
chopped fresh cilantro
chopped scallions, green parts only
In large skillet over medium heat, brown ground meat until no longer pink, crumbling while stirring; discard grease. Add in taco seasoning, diced tomatoes with juice, corn, rice and chicken stock/broth. Raise heat to High bringing to a boil; reduce to simmer for 20 minutes; cover. Stir half way through cooking time.
Add Colby Jack cheese evenly over the top of the meat mixture; cover for 2-3 minutes or until cheese melts.
Serve with desired toppings.
