Description

Prepare this delicious breakfast and bake it immediately or refrigerate it overnight and bake it in the morning. Either way, it's loaded with sausage, eggs, bacon bits, flour tortillas and Cheddar cheese.

Ingredients

1 lb. sausage, browned
2 c. shredded Cheddar cheese, divided
8 - 8 inch flour tortillas
6 eggs
2 c. half-and-half
1 T. all-purpose flour
1/2 t. salt
3 oz. package Real Bacon Bits

Spray a 13x9 inch baking pan/dish with cooking spray.

Cook sausage; discard excess grease. In a large bowl, stir together browned sausage, 1 c. Cheddar cheese and 1/2 of the bacon bits.

Place one eighth of the mixture down the center of each tortilla; roll up; place seam side down in baking pan/ dish.

In another large bowl, beat eggs, half and half, flour and salt. Pour over the tortillas in the baking dish. Cover the baking dish and place in the refrigerator or bake immediately.

When ready to bake, preheat the oven to 350 degrees.

Uncover baking dish. Sprinkle remaining 1 c. Cheddar cheese over tortillas. Sprinkle the remaining bacon bits over the cheese. Cover baking dish.

Bake 35 minutes; uncover; bake 10 minutes longer or until set and cheese is melted.

Makes 8 enchiladas.
