Description
If needing a great appetizer or meal for Super Bowl parties, holiday parties or just a great meal, these are perfect. They have great flavor and and using store bought frozen meatballs make them easy to make.
Ingredients
- 2 lb. frozen meatballs
- 28 oz. enchilada sauce
- 10 oz. canned Rotel tomatoes, drained (your favorite)
- 1/2 c. Fiesta blend cheese, shredded
- fresh diced cilantro, for garnish, optional
Steps
- Add meatballs, enchilada sauce and Rotel tomatoes to a slow cooker. Cook on High for 3-4 hours or on Low for 4-5 hours.
- Sprinkle Fiesta blend cheese on top; cover; cook for 10 more minutes or until cheese has melted.
- Top with cilantro, if desired. Serve over cooked rice for a meal or with a toothpick for a great appetizer.
