Beef Enchilada Casserole

Description

Your family will love this delicious meal. It's full of the traditional enchilada ingredients but in an easy to make casserole.

Ingredients

10 small corn or flour tortillas, cut in half
non-stick cooking spray
1 T. olive oil
1 lb. ground beef
1 T. taco seasoning
salt and pepper, to taste
15 oz. can pinto or black beans, rinsed and drained
2 c. red enchilada sauce, divided
2 1/2 c. shredded Cheddar cheese, divided
2 tomatoes cored, seeded and diced, for garnish
1/4 c. sliced green onions, for garnish
avocado slices, sour cream, optional garnishes

Preheat oven to 350 degrees. Spray a 2 qt. baking dish with non-stick cooking spray.

Heat oil in a large skillet over medium heat. Add ground beef; cook for 6-8 minutes, breaking up the meat while cooking. Discard any excess grease. Add taco seasoning, beans, salt and pepper; stir to combine.

Spread 1/4 c. enchilada sauce over the bottom of the prepared baking dish. Layer 1/3 of the tortillas over the sauce; add 1/2 of the meat mixture; add 3/4 c. cheese on top of the meat; pour 1/2 c. enchilada sauce over the cheese. Repeat the process with 1/3 of the tortillas, remaining meat mixture, 3/4 c. cheese and 1/2 c. enchilada sauce.
Add the remaining 1/3 of the tortillas on top of the casserole; pour the remaining sauce over the top of the tortillas. Sprinkle on the rest of the cheese.

Cover the casserole with foil. Bake for 30 minutes; uncover; bake 5-10 minutes or until cheese is melted and browned.

Sprinkle tomatoes and green onions over the top. Allow the casserole sit for 5 minutes before cutting. Serve with additional toppings, if desired.

6 servings.

Tip: Butter both side of the tortillas before adding to casserole to keep the tortilla from getting soggy.
