Description
Your family will love this delicious meal. It's full of the traditional enchilada ingredients but in an easy to make casserole.
Ingredients
- 10 small corn or flour tortillas, cut in half
- non-stick cooking spray
- 1 T. olive oil
- 1 lb. ground beef
- 1 T. taco seasoning
- salt and pepper, to taste
- 15 oz. can pinto or black beans, rinsed and drained
- 2 c. red enchilada sauce, divided
- 2 1/2 c. shredded Cheddar cheese, divided
- 2 tomatoes cored, seeded and diced, for garnish
- 1/4 c. sliced green onions, for garnish
- avocado slices, sour cream, optional garnishes
Steps
- Preheat oven to 350 degrees. Spray a 2 qt. baking dish with non-stick cooking spray.
- Heat oil in a large skillet over medium heat. Add ground beef; cook for 6-8 minutes, breaking up the meat while cooking. Discard any excess grease. Add taco seasoning, beans, salt and pepper; stir to combine.
- Spread 1/4 c. enchilada sauce over the bottom of the prepared baking dish. Layer 1/3 of the tortillas over the sauce; add 1/2 of the meat mixture; add 3/4 c. cheese on top of the meat; pour 1/2 c. enchilada sauce over the cheese. Repeat the process with 1/3 of the tortillas, remaining meat mixture, 3/4 c. cheese and 1/2 c. enchilada sauce.
