This amazing vegetarian dish is a great side dish but can be a main dish as well. It is healthy, tasty and very satisfying.
1/4 c. extra virgin olive oil
1 medium onion, diced
1 large bell pepper, diced
2 garlic cloves, minced
1 t. ground cumin
1/4 t. red pepper flakes or to taste
14.5 oz. can diced tomatoes
2 c. long grain brown rice
4 c. vegetable broth/stock
16 oz. can black beans, rinsed
1/4 c. cilantro, chopped
In a large, heavy-bottomed pot or skillet, sauté onion in olive oil for about 3-5 minutes; add bell pepper; cook 3-4 minutes. Add garlic, cumin and red pepper flakes; cook 1 minute. Add diced tomatoes; cook, stirring occasionally for 5 minutes.
Add rice and vegetable broth/stock; stir well; bring to a boil; cover tightly; reduce heat to low; simmer for about 45 minutes or until rice is cooked through.
Stir in black beans and cilantro. Let rest for 5 minutes.
Serve.
