Cheese Taco Shells

Description

These low carb and Keto friendly taco shells are to die for. They are easy to make and so delicious, you will wonder why you haven't made them before.

Ingredients

2 c. shredded Cheddar cheese
freshly ground black pepper
1 T. vegetable oil
1 white onion, chopped
1 lb. ground beef
1 T. taco seasoning
shredded lettuce, for serving
chopped tomatoes, for serving
hot sauce, for serving
other favorite taco toppings

Preheat oven to 375 degrees. Line a baking sheet with parchment paper; spray with non-stick cooking spray.

Place 1/2 c. mounds of cheddar cheese on the prepared baking sheet; season with pepper.

Bake until cheese is melty and slightly crispy, 5 - 7 minutes. Blot and remove grease with a paper towel.

Meanwhile, set up 4 stations of 2 upside-down glasses for each station and a wooden spoon as a bridge at each station. Using a spatula, immediately transfer the cheese mounds to the wooden spoons to form shells. Place cheese mounds over the handles so that they hang down to form shells. Let cool.

Meanwhile, make taco meat:
In a large skillet over medium heat, heat oil; add onions; cook until soft, 5 minutes; add ground beef; cook until no longer pink, about 6 minutes. Drain and discard grease. Season with taco seasoning.

Taco assembly: Place beef in shells and top with lettuce, tomatoes and hot sauce or other favorite taco toppings.
