Everyone will think that you have spent hours in the kitchen preparing this delicious, flavorful soup, but in reality it takes less than 30 minutes. It's the perfect weeknight meal for busy families and will become a staple in your recipe box.
Taco Soup:
15 oz. can tomatoes, diced
15 oz. can corn, drained
15 oz. can black beans, rinsed and drained
15 oz. can pinto beans, rinsed and drained
10 3/4 oz. can cream of chicken soup
12 oz. can chicken breast, drained
10 oz. can green enchilada sauce
15 oz. can chicken broth
homemade taco seasoning (see below)
choice of optional toppings: sliced black olives, diced avocado, sour cream, tortilla strips, limes wedges
Homemade Taco Seasoning:
1 T. chili powder
1/4 t. garlic powder
1/4 t. onion powder
1/4 t. dried oregano
1/2 t.n paprika
1 1/2 t. ground cumin
1 t. salt
1 t. black pepper
In a large pot, add tomatoes, corn, black and pinto beans, cream of chicken soup, chicken breast, green enchilada sauce, chicken broth and homemade taco seasoning. Bring to a boil; reduce to a simmer over medium heat; let simmer for 5 minutes.
Serve with desired toppings.

Combine all seasonings together. Store in an airtight container.
