Everyone will think that you have spent hours in the kitchen preparing this delicious, flavorful soup, but in reality it takes less than 30 minutes. It's the perfect weeknight meal for busy families and will become a staple in your recipe box.
Ingredients
- Taco Soup:
- 15 oz. can tomatoes, diced
- 15 oz. can corn, drained
- 15 oz. can black beans, rinsed and drained
- 15 oz. can pinto beans, rinsed and drained
- 10 3/4 oz. can cream of chicken soup
- 12 oz. can chicken breast, drained
- 10 oz. can green enchilada sauce
- 15 oz. can chicken broth
- homemade taco seasoning (see below)
- choice of optional toppings: sliced black olives, diced avocado, sour cream, tortilla strips, limes wedges
- Homemade Taco Seasoning:
- 1 T. chili powder
- 1/4 t. garlic powder
- 1/4 t. onion powder
- 1/4 t. dried oregano
- 1/2 t.n paprika
- 1 1/2 t. ground cumin
- 1 t. salt
- 1 t. black pepper
Steps
- In a large pot, add tomatoes, corn, black and pinto beans, cream of chicken soup, chicken breast, green enchilada sauce, chicken broth and homemade taco seasoning. Bring to a boil; reduce to a simmer over medium heat; let simmer for 5 minutes.
- Serve with desired toppings.
- 8 servings.
