Chicken Taco Seasoning:
2 t. chili powder
½ t. paprika
1½ t. salt
1 t. garlic powder
1 t. onion powder
½ t. ground cumin
½ t. ground black pepper
½ t. dried oregano
Mexican Chicken:
1 T. extra virgin olive oil
2 lb. boneless skinless chicken breasts or thighs
1 c. chicken broth
Options for serving: tortillas, hard or soft taco shells, taco bowls, shredded Mexican or Cheddar cheese, diced tomato, avocado, guacamole, sour cream, cilantro, squirt of freshly squeezed lime juice
In a small bowl, combine all of the ingredients to make the taco seasoning; stir to combine.
Coat chicken on both sides with the seasoning.
Drizzle olive oil in a large skillet over medium heat. Add chicken; cook for about 2-3 minutes per side. Add chicken broth. Cover skillet; cook chicken for about 15-20 minutes, until chicken registers 165 degrees internally and is cooked through.
Remove chicken from the skillet; shred with a fork; return to the skillet. Stir to coat chicken in the remaining sauce in the skillet. Keep warm on low heat for about 3-5 minutes to get good flavor throughout the chicken.
Serve warm.
