Weeknight taco dinners can be healthy and quick with these Turkey Taco Lettuce Wraps. It's an easy, flavorful dinner to prepare and can be on the table in less than 20 minutes.
1 T. olive oil
3/4 c. chopped yellow or red onion
1 lb. 95% lean ground turkey
2-3 cloves garlic, minced or chopped
salt and freshly ground black pepper
1 T. chili powder (or 2 t. regular chili powder and 1 t. ancho chili powder)
1 t. ground cumin
1/2 t. paprika
1/2 c. tomato sauce
1/2 c. low-sodium chicken broth/stock
Romaine, iceberg or bibb whole lettuce leaves, doubled up, for serving
Choice of Toppings: shredded Mexican cheese, diced Roma tomatoes, diced red onion, diced/sliced avocado, chopped fresh cilantro, guacamole, sour cream
Heat olive oil in a non-stick skillet over medium-high heat; add onion; saute 2 minutes. Add turkey and garlic; season with salt and pepper; cook, stirring and breaking up turkey, until cooked through, about 5 minutes. Add chili powder, cumin, paprika, tomato sauce and chicken broth/stock. Reduce to a simmer; cook about 5 minutes or until sauce has reduced.
Serve over doubled up lettuce leaves with favorite toppings.
