Taco Casserole

Description

Taco Tuesdays couldn't be more delicious or easier when you serve this casserole. It's a fun way to change things up a bit and will definitely be a hit with family or friends.

Ingredients

1 lb. 80% ground beef
1 small yellow onion, diced
3/4 c. water
1 oz. taco seasoning (about 2 T.)
16 oz. refried beans
3/4 c. sour cream, at room temperature (NOT light sour cream or it could curdle)
2 c. shredded cheddar cheese
1/4 c. black olives, sliced
3/4 c. crunchy toppings like tortilla chips, Doritos or Fritos
Garnish: chopped green onions, 1/3 c. shredded lettuce, 1/3 c. diced tomatoes, chopped cilantro, optional

Allow the sour cream come to room temperature while preparing the ground beef to prevent it from curdling when baked.

Preheat oven to 350 degrees.

Add ground beef and onions to a large skillet; cook and crumble over medium heat until meat is cooked through. Discard excess grease.

Add water and taco seasoning; bring to a boil; reduce heat; simmer for 5 minutes, stirring occasionally; remove from heat.

Spread refried beans in an even layer in a 9x13 inch casserole dish; spread the sour cream over the refried beans; top with ground beef mixture; sprinkle on the cheese.

If preparing in advance, let cool; cover and refrigerate until ready to bake.

Baking:
If baking immediately, bake, uncovered, for 15 minutes, or until the cheese has melted. Add the black olives and crunchy toppings. Bake uncovered for 8 minutes.

If baking after it has been refrigerated, bake, covered, for 25 minutes; remove cover; bake for 5 more minutes. Add the black olives and crunchy toppings. Bake uncovered for 8 minutes.

Serve, garnished with lettuce, green onions and tomatoes and cilantro, if desired.
