If you love spinach artichoke dip and quesadillas, put them together to make a delicious meal. It's quick and easy and so good.
soft tortillas
2 T. butter or olive oil
Filling:
1 c. mayonnaise
1 c. Parmesan cheese
14 oz. can artichoke hearts, drained, coarsely chopped
9 oz. frozen spinach, thawed and squeezed well to drain
4 cloves garlic, minced
salt, to taste
1/2 c. favorite shredded cheese
Preheat oven to 400 degrees.
In a bowl, stir together mayonnaise, Parmesan cheese, artichoke hearts, garlic, spinach and salt. Spread into a small baking dish. Bake 15 minutes.
Heat a large skillet; melt 2 T. butter (or olive oil). Place 3 tortillas in skillet; top each with a bit of shredded cheese. Spread spinach artichoke filling over the cheese; top with another tortilla.
Cook until bottom is golden; flip; cook the second side.
Let sit a few minutes before cutting into pieces.
