Description
If you love spinach artichoke dip and quesadillas, put them together to make a delicious meal. It's quick and easy and so good.
Ingredients
- soft tortillas
- 2 T. butter or olive oil
- Filling:
- 1 c. mayonnaise
- 1 c. Parmesan cheese
- 14 oz. can artichoke hearts, drained, coarsely chopped
- 9 oz. frozen spinach, thawed and squeezed well to drain
- 4 cloves garlic, minced
- salt, to taste
- 1/2 c. favorite shredded cheese
Steps
- Preheat oven to 400 degrees.
- In a bowl, stir together mayonnaise, Parmesan cheese, artichoke hearts, garlic, spinach and salt. Spread into a small baking dish. Bake 15 minutes.
- Heat a large skillet; melt 2 T. butter (or olive oil). Place 3 tortillas in skillet; top each with a bit of shredded cheese. Spread spinach artichoke filling over the cheese; top with another tortilla.
