You can still enjoy tacos without the shells when you serve them in tomatoes. You still get all of the flavor but it's a lot healthier.
4 large tomatoes
1 lb. lean ground beef
1 packet taco seasoning
shredded lettuce
diced onions
Fiesta Mexican blend shredded cheese
sour cream
taco sauce
Wash the tomatoes; remove green tops; cut an "X" into the top of each tomato; gently open them without pulling them completely apart.
Brown the hamburger; discard any excess grease; add in taco seasoning; stir; cook for a few minutes.
Add lettuce to the bottoms of the tomatoes; add taco meat, onions and cheese; top with sour cream.
Serve with taco sauce.
