Description
This is a quick and delicious meal that can be on the table in about 20 minutes. It uses rotisserie chicken, Ro-tel canned tomatoes and microwaveable rice to make an easy one skillet meal.
Ingredients
- 1 T. olive oil
- 2 cloves garlic, minced
- 1/2 white onion, diced
- 1 t. chili powder
- 1 t. ground cumin
- 1/2 t. cayenne pepper
- 1/2 t. kosher salt
- 1/2 t. black pepper
- 1/4 t. ground turmeric
- 15 oz. can tomato sauce
- 10 oz. can Ro-tel diced tomatoes with green chiles
- 3 c. shredded rotisserie chicken
- 2 - 8.8 oz. bags microwaveable white rice
- 1 1/2 c. grated pepper jack or Mexican cheese
- fresh cilantro, optional for serving
Steps
- In a deep skillet, heat olive oil over medium-high heat. When oil is hot, add garlic, onion, chili powder, cumin, cayenne pepper, salt, pepper and turmeric. Cook, stirring often, until onion is soft and the spices are toasted, about 3 minutes.
- Pour in tomato sauce, Ro-tel diced tomatoes with green chiles, shredded chicken and bags of rice; stir; cook until rice is heated through and beginning to absorb some of the liquid, about 5 minutes. Turn heat to low. Sprinkle cheese over the top. Cover; allow cheese to melt completely, 2 - 3 minutes.
- Sprinkle on cilantro, if desired.
