This casserole is so easy and quick to make, you'll serve it often. It makes a delicious breakfast, brunch or dinner with green chilies, eggs and cheese.
2 - 10 oz. cans whole green chilies, drained
6 oz. Monterey Jack cheese, cut into strips
8 eggs
2/3 c. milk
1 c. all-purpose flour
1 t. baking powder
1 1/2 c. shredded Cheddar cheese
Preheat oven to 350 degrees. Spray a 9x13 inch baking dish with non-stick cooking spray; set aside.
Insert a strip of Monterey Jack cheese into each chili; place in prepared baking dish.
Add eggs, milk, flour and baking powder in a bowl; beat with a whisk until thoroughly combined; pour over chilies; top with Cheddar cheese.
Bake 30 minutes, until egg is puffy and cheese is bubbly.
Serve.
