Shredded Chicken Tacos

Description
Taco Tuesdays don't have to be beef tacos. These tacos are just as good and maybe even better. They can be on your table in about 30 minutes and even faster if you use rotisserie chicken instead.
Ingredients
2 lb. boneless, skinless chicken breasts
salt and pepper
1 T. avocado oil
1/2 red onion, thinly sliced
3 garlic cloves, minced
12 oz. jar salsa, like double roasted from Trader Joe's
1/2 c. chicken broth or stock
2 T. canned adobo sauce
freshly squeezed juice from 1 lime
tortillas or taco shells, for serving
favorite toppings, like onions, queso fresco, sliced or diced avocado, sour cream, guacamole, diced tomatoes, etc.

Lightly sauté onions and garlic in a pot over medium-high heat.
Pat chicken dry. Season both sides with salt and pepper.
Move garlic and onions to sides of the pot; add the chicken; brown each side for 1-2 minutes.
Reduce heat to medium-low; add salsa, chicken broth, adobo sauce and lime juice over chicken. Stir. Cover; simmer for 15-20 minutes, turning chicken over after 5 minutes.
When chicken is cool enough to handle, shred chicken with 2 forks into bite-size pieces.
Cook chicken in the sauce for 7-10 minutes.
Spoon chicken into the center of warm tortillas then top with your favorites toppings.
