This salad makes a great, light meal all by itself. It's one of the best salads ever.
1 large flour tortilla
1/2 c. shredded cheese Mexican blend
1/3 c. cilantro lime rice
1/3 c. black beans, drained and rinsed
1/2 c. shredded chicken, grilled steak, pulled pork or cooked ground beef (leftovers are great to use)
2 c. romaine lettuce
1/4 c. Pico de Gallo
1/4 c. guacamole
2 T. sour cream
1/4 c. mini tortilla strips
1 T. Cotija cheese
2 T. freshly chopped cilantro
1/4 c. Creamy Tomatillo Dressing
Heat a large skillet over high heat; toast a tortilla in the dry skillet. Flip the tortilla over, sprinkle on shredded cheese; cover with lid to melt the cheese.
Place the tortilla in a large bowl. Fill bowl with the lettuce, beans, rice, and choice of meat. Add the desired toppings.
Drizzle with the dressing just before serving.
Makes 1 large salad.
