Skip the taco shells and use avocado shells instead. It's healthier and still delicious.
1 lb. ground beef
1 packet taco seasoning
1/2 onion, chopped
2 ripe avocados
1 c. shredded Mexican blend cheese, divided
4 T. sour cream, divided
4 T. salsa, divided
1/4 c. green onions, chopped
Heat ground beef and onion in a skillet over medium-high heat; cook until meat is browned and onions have softened. Discard excess fat. Sprinkle on taco seasoning; stir.
Cut avocados in half across lengthwise; remove and discard the pit.
Scoop out the flesh from the avocados. Fill avocado shells with the taco meat. Top each with shredded cheese, sour cream, salsa and the scooped out avocado.
Serve garnished with green onions.
