1 lb. boneless, skinless chicken breasts, cut into 1 in. strips
1 large yellow onion, cut into strips
3 medium bell peppers, 1 green, 1 red, and 1 yellow or orange, each sliced into strips
2–3 T. olive oil
1 oz. packet fajita seasoning mix
tortillas, warmed according to package directions
Topping Choices:
sour cream or plain Greek yogurt, diced tomatoes, diced avocado, salsa, shredded Mexican cheese, chopped cilantro, freshly squeezed lime juice
Preheat oven to 400 degrees F.
Place chicken strips, sliced onion and bell peppers on a sheet pan. Drizzle with olive oil; toss everything to coat with oil. Sprinkle fajita seasoning mix over everything; toss until seasoning is evenly distributed evenly.
Bake 20-25 minutes, or until chicken has reached an internal temperature of 165 degrees F.
Remove from the oven; allow to cool slightly.
Serve in the tortillas with desired toppings.
