Mexican Chicken Torta Sandwiches

Description

This hot sandwich makes a delicious and easy dinner that everyone will enjoy.

Ingredients

Filling:
2 c. skinned, boned, chopped, deli rotisserie chicken
3/4 c. black beans, rinsed, drained
1/4 c. fresh cilantro, chopped
1/4 c. sour cream
1 c. guacamole

For the Rolls:
4 (8 inch) soft hoagie rolls, split
1/4 c. butter, melted
4 (3/4 oz.) slices American cheese, each cut in half

Preheat oven to 375 degrees F.

Combine all filling ingredients in a bowl, except for guacamole.

Scoop out bread from inside the rolls, to 1/2 inch of the edges. Brush melted butter over insides of rolls.

Spoon 3/4 c. chicken mixture into bottom halves of rolls. Place 2 cheese halves over the chicken mixture; fold top half of roll over cheese.

Wrap each sandwich in aluminum foil; place sandwiches on an un-greased baking sheet.

Bake 15-20 minutes or until heated through.

Remove from oven. Unwrap each sandwich; open sandwiches.

Spread 1/4 c. guacamole over cheese; close sandwiches.

Serve warm.

4 sandwiches.

* A rotisserie chicken will typically yield 3 - 4 c. chopped chicken.
