Description
Change up your breakfast routine and make breakfast burritos. They make a satisfying meal with eggs, choice of veggies and sausage all wrapped in burrito size tortillas.
Ingredients
- 1 T. olive oil
- 2 c. chopped vegetables, such as red onion, bell pepper, mushrooms, broccoli
- 1 lb. breakfast or Italian sausage, casings removed
- 8 eggs
- 2 pinches salt, or to taste
- 2 t. unsalted butter
- 8 burrito size tortillas
- 2 c. shredded Cheddar cheese, Monterey jack, pepper jack or a combination
Steps
- Preheat oven to 375° F.*
- Heat the olive oil in a medium to large non-stick skillet over medium heat. When hot, add vegetables; cook, stirring often, until softened, about 4 minutes. Transfer vegetables to a medium bowl.
- Add the sausage to the same skillet; cook, crumbling, until browned and fully cooked; transfer to the bowl with the vegetables, leaving any grease behind.
