These chicken taco lettuce wraps are a healthy version of classic tacos. They are keto friendly and low carb but still totally delicious with seasoned ground chicken, toppings of choice all served in large lettuce leaves instead of taco shells or tortilla
1 T. olive oil
3/4 c. chopped onion
1 lb. ground chicken breast
2 cloves garlic, minced
1 T. chili powder
1 t. ground cumin
1/2 t. paprika
1/3 c. tomato paste
1/2 c. low-sodium chicken broth
salt, to taste
ground black pepper, to taste
For Serving:
whole romaine lettuce leaves
shredded cheese
chopped tomatoes
any color bell peppers, sliced
green onions, chopped
sour cream
Heat olive oil in a skillet over medium high heat; add onion; cook until softened. Add ground chicken, garlic, salt and pepper. Cook, crumbling the chicken into small pieces until cooked through, about 5 minutes.
Add chili powder, cumin, paprika, tomato paste and chicken broth. Reduce heat to medium-low; cook until the liquid has reduced to your preference.
Scoop mixture into the romaine leaves, top with the cheese, tomatoes, bell peppers, green onions, sauce and sour cream.
