These breakfast taquitos don't necessarily have to be for breakfast. They make a great lunch or even dinner too. They are satisfying and are packed with protein from the eggs, cheese and ham. They are so easy to make, even older kids can prepare them.
1 T. unsalted butter
2 c. chopped deli ham or chopped leftover baked ham
6 large eggs, beaten
3 T. half & half
salt and pepper
4 scallions, diced
12 - six inch flour tortillas
1 1/2 c. shredded Colby Jack or Pepper Jack cheese
non-stick cooking spray
Kosher salt
salsa and sour cream, for serving
Preheat oven to 425 degrees F. Line a baking sheet with aluminum foil; spray with non-stick cooking spray.
Heat butter in a large non-stick skillet over medium-high heat. Add ham; sauté until starting to crisp. Add eggs and half & half; stir to scramble. Season with salt and pepper. Transfer to a medium bowl; stir in scallions.
Microwave the tortillas for 20-30 seconds until pliable or according to package directions.
Add 1/4 c. filling to the lower third of each tortilla, followed by 2 T. cheese. Roll up tightly; place seam side down on the baking sheet, making sure the rolls do not touch each other. Spray lightly with cooking spray and a bit of kosher salt.
Bake 12-14 minutes, or until golden and crispy.
Serve with sour cream and your favorite salsa.
