Serve this tasty taco salad for a change on Taco Tueday. You don't even have to turn on the oven to heat up the shells since you are using Doritos instead, so it's great for a hot weather meal.
1 lb. ground beef
1 oz. packet favorite taco seasoning
water as called for on seasoning packet
3 or 4 Romaine lettuce hearts, rinsed, chopped (or iceberg lettuce)
1 c. black beans, rinsed
1 large tomato, chopped OR halved cherry tomatoes
1/2 c. shredded Cheddar cheese
1 1/2 c. Nacho Cheese Doritos, broken into bite-sized pieces
1 c. Catalina, French or Ranch dressing
fresh cilantro, optional
black or Greek olives, optional
Brown and crumble ground beef in a large skillet over medium-high heat. Discard excess grease.
Add taco seasoning and the water that is called for on packet; stir until mixture comes to a boil; reduce heat to low; simmer 10 minutes. Remove from heat. Allow meat to cool slightly.
In a large bowl, add lettuce, beans, tomatoes, cheese and slightly cooled ground beef; toss.
Serve immediately or refrigerate until ready to eat topped with the dressing and Doritos, olives and cilantro, if using.
