Switch up Taco Tuesdays by making these taco inspired baked potatoes. They are a breeze to make, delicious and very satisfying and filling.
4 - 6 medium Russet potatoes
1 lb. lean ground beef
1 oz. packet taco seasoning
water called for on seasoning packet
Topping choices: shredded lettuce, chopped tomatoes, shredded Cheddar cheese, sour cream, salsa, guacamole, chopped green onions
Preheat oven to 400 degrees F.
Scrub potatoes; pat dry. Poke a few holes in each potato; wrap each in aluminum foil.
Bake for 1 hour. Carefully remove hot potatoes from oven; set aside to cool slightly.
While potatoes are baking, brown and crumble ground beef over medium-high heat in a large skillet; discard excess grease.
Add taco seasoning and the water packet calls for to the beef. Bring mixture to a boil; reduce heat to low; simmer for 10 minutes.
Remove foil from the potatoes; cut a slit in the top to open.
Fill each potato with ground beef mixture; add favorite taco toppings.
4-6 servings.
