Use your air fryer to make delicious quesadillas with veggies, Mexican seasonings and your favorite cheese. They make a perfect quick snack, lunch or even dinner.
1/2 red bell pepper, finely chopped
1/2 any color bell pepper, finely chopped
1 small onion, thinly sliced or chopped
1 T. oil
1 t. taco seasoning
1/4 t. salt
1 t. thinly sliced green onions
2 c. favorite shredded cheese
4 small - medium tortillas, flour or corn
non-aerosol non-stick cooking spray
salsa and/or sour cream, for serving
Preheat the air fryer to 350 degrees F. while prepping the vegetables.
Cut a piece of aluminum foil about the size as the air fryer basket. Fold the edges to make a sort of “bowl” for the vegetables. Add the peppers, onions, oil, taco seasoning, and salt to the foil bowl; carefully stir.
Cook veggies in the air fryer for 5 minutes or until softened. Remove from the air fryer; set aside.
Lightly grease the air fryer basket with non-aerosol non-stick cooking spray OR use parchment paper to save on the mess; place one tortilla in.
Top the tortilla with layered toppings: add one-fourth of the cheese, one-half of the veggies, one-half of the green onions, and then another one-fourth of the cheese.
Place the second tortilla on top; cook for 3-4 minutes per side, flipping over halfway through. Peek every once in awhile to ensure that the edges aren't lifting too much. If they are, simply press the tortilla back down into the cheese. Or, you could secure the two with several wooden toothpicks to help them stay put.
Repeat with the remaining ingredients to form the second quesadilla.
Remove from the air fryer.
Serve hot with salsa and/or sour cream.
